What is Ribeye Heart?

I love a fun little twist on a classic like Ribeye Heart. No, this is not a beef heart. Completely different cut. This is a thick cut ribeye that has been sliced just enough to open up and look like a heart.

Ribeye hearts are a great addition to the Ribeyes and Bacon Wrapped Scallops Surf and Turf because they are delicious and fit the theme! We will season these with olive oil to help get a crust along with sea salt, black pepper and garlic powder. However, I chose to cook this steak on a cast iron skillet over hot Cowboy Charcoal; but, you are more than welcome to cook it on a grill instead. Just make sure to use lump charcoal like Cowboy to get a nice clean smoke flavor along with some high heat.

How do I make Bacon Wrapped Scallops?

Next, we have the surf part of our meal with Bacon Wrapped Scallops. I dried the scallops off to help create a great crust while cooking over the coals. They were seasoned with sea salt, black pepper, garlic powder and cumin to get a nice and zesty flavor. Wrap them in bacon, and then make sure to skewer them to help keep the bacon on the scallops. Pro tip: Make sure to rotate the scallops on all sides throughout the cook to get nice and crispy bacon. They are the perfect seafood part for theseRibeyes and Bacon Wrapped Scallops Surf and Turf.
