INGREDIENTS FOR MELT IN YOUR MOUTH CHICKEN;

You won’t believe how few ingredients it takes to make and how fast you put it together. Best of all, no mountain of dirty dishes to wash because this is a one-pot meal!

  • 4 boneless chicken breasts
  • 1 cup mayonnaise (or Greek yogurt for a healthier option)
  • 1 cup Parmesan Cheese (or sharp Cheddar or Asiago cheese) divided
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder

INSTRUCTIONS FOR MAKING MELT IN YOUR MOUTH CHICKEN;

  • Step 1. preheat oven to 375F.
  • Step 2. Cut chicken breast in half. Flatten each piece with a meat pounder or rolling pin to ensure even cooking. Arrange your chicken pieces in one layer on your baking dish. (If the time permits, add ¾ cup of buttermilk to the chicken and marinate 30 mins to overnight).

  • Step 3. In a small bowl, mix the mayonnaise, ½ cup of Parmesan cheese, salt, pepper, and garlic powder. Top each piece of chicken with the mixture and spread evenly.

  • Step 4. Sprinkle the ½ cup Parmesan cheese remaining evenly on top.

WHAT TO SERVE WITH MELT IN YOUR MOUTH CHICKEN?

This chicken pairs perfectly with rice or Sweet Potato Fries! and steamed veggies or Amish Broccoli Salad. If you are counting carbs, just add veggies.

  1. If you don’t have buttermilk, you can make it yourself by mixing 1 cup of milk with 1 tablespoon of white vinegar. Let this mixture stand for 5 minutes and use as directed.
  2. You can make this recipe Italian by adding ¼ cup of chopped sundried tomatoes to the mixture.
  3. f you want a Mexican version, add a teaspoon of taco seasoning to the mixture
  4. If you just want to spicy things up, add a few dashes of Tabasco sauce to the mixture.
