Ingredients
6Serves*
1kg potatoes, peeled, thinly sliced
1x 420g can Campbell’s Cream Of Chicken Condensed soup
3/4cup milk
1/2cup grated tasty cheese
*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed
Method
- Preheat oven to 200ᵒC. Lightly grease an 8- cup ovenproof, micro-wave safe dish.
- Evenly layer potatoes in prepared dish.
- Combine soup and milk. Pour evenly over potatoes, gently shaking the dish to allow the mixture to run through the potato layers.
- Season with cracked pepper and sprinkle with cheese.
- Cover and bake for 30 minutes; remove lid and bake for 15 minutes or until golden and potatoes are tender.

I suggest pre boiling (half cook) the sliced potatoes first as most of the time the potatoes end up under cooked

i’ve seen this recipe done with cream of mushroom soup. Don’t know if it’s vego, though. Also seen cream of celery soup out there. 🙂

My method was Scalloped Potatoes, Pasta Bake sauce (1 jar), Mixed Vegetable plus any other thing including Mushrooms or Baked Beans etc. Place into a shallow baking dish and sprinkle grated cheese on top. Pop into the oven at 180C for about 40 minutes.
For a non-vegan you can add ham, bacon or any sliced sausage 🙂Reply
