These sweet bunny pancakes are the perfect Easter breakfast for kids. Made with homemade pancakes, fresh fruit and a touch of hazelnut, these little bunnies will go fast, as bunnies do this time of year.

Yes, Easter baskets are super fun and we love to get little treats for the kids whenever we can. I mean who doesn’t love hunting for Easter eggs full of Easter candy?

That said, this is a great way to enjoy Easter breakfast for kids because it combines healthy elements with the sweetness of pancakes and seriously, what could be better?

Ingredients Needed

These sweet Easter treats are made with just a few simple ingredients.

Here’s what you need from the grocery store:

Main ingredients for the Pancakes:

  • 1 1/4 cup All-Purpose Flour 1 cup Milk
  • 2 tbsp Butter melted
  • 2 tsp Baking Powder
  • 2 tbsp White Sugar
  • 1 Egg
  • 1/4 tsp Vanilla Extract

Toppings & Materials for 1 Bunny Pancake:

  • 1 banana
  • 1 strawberry
  • 4 blueberries
  • 1 tbsp hazelnut spread (I love Nutella but melted chocolate chips would work too)
  • 1 plastic baggie

Variations

Easter bunny pancakes are adorable and fun to eat. Feel free to make a bunny face or even bunny butt pancakes for a fun twist! You can make this Easter bunny breakfast idea in lots of ways.

Use chocolate chips for the eyes and nose if you want to add a little chocolate. Or try adding tracing a drizzle of chocolate on the banana slices. The bottom line is this cue Easter breakfast is going to taste great.

How to Make Them

This is such a special Easter breakfast for little fingers because it’s easy to eat and fun to look at. Making pancakes at home is such a wonderful family tradition. Have fun with it!

To get started with the pancakes, add the dry flour, baking powder, and sugar to a large bowl and thoroughly combine.

Mix the milk, butter, egg, and vanilla extract with the dry mix until well combined.

Then, bring a nonstick skillet or frying pan to medium heat on the stovetop.

Spray a thin layer of non-stick cooking spray and add 1⁄4 cup of batter into the pan. As pancakes cook, wait until the top side starts to bubble, then flip.

Let the pancake continue cooking for about 1 minute or until golden on the bottom.

Once cooked, transfer to a plate.

To build the bunny, start by cutting a banana in half crosswise.

Then take one of the halves and cut it into thirds lengthwise.

Use the two outer pieces as the bunny ears, facing each ear up on a plate.

Layer the pancake over the bottoms of the ears ands cut one additional banana slice into a circle and place onto the pancake for the nose.

Cut the stem off of the strawberry and cut the strawberry in half lengthwise. Place the strawberry halves directly beneath the pancake to resemble a bowtie.

Add the blueberries to the bunny face and to the middle of the bowtie.

Fill a plastic baggie with hazelnut spread and cut a small hole at the tip. Pipe a small mouth onto the banana slice.You can also use a bit of the chocolate spread to adhere the blueberry eyes and banana nose.

Once your mini bunny pancakes are assembled, you are ready to eat! Serve as is or with a bit of maple syrup for dipping.

Ingredients

Pancakes:
